    Hello All,

    I'm going to make this tomorrow night for dinner (tonight is chili):

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Country Beef and Rice
    Categories: Hamburger, Rice, Beef
    Yield: 4 Servings

    2 Slices bacon, cut into 1"
    Pieces
    1 lb Ground beef
    1/2 c Chopped onion
    2 c (1/2 pkg.) frozen broccoli,
    Corn and red bell peppers
    1 c (10 3/4 oz.) condensed
    Mushroom soup
    1 Soup can water
    1/4 ts Garlic powder
    1 1/2 c Dry rice

    Cook bacon in a skillet until crisp. Remove bacon and set aside.
    Brown beef with onion in hot drippings in skillet; drain fat. Add
    vegetables, soup, water and garlic powder. Bring to a boil; reduce
    heat and simmer 1 minute. Stir in bacon and rice. Cover; remove
    from heat. Let stand 5 minutes. Makes 4 servings.

    The instructions on cooking the rice are indeed there. Look at the sentence at the top that I quoted from my original post. You cook the rice in the final simmer. Re-read the instuctions again, carefully. You don't always pre-cook the rice.

    i don't think i've EVER cooked rice. well maybe once when i was in my teens. now i'm afraid to. it's instant or ben's (rip uncle) for this guy.

    i need to go back on low carb anyways. i'm getting lots of exercise but the gut isnt coming off.

    Cooking rice isn't hard but you just can't overcook it. I have to be careful eating rice without teeth. I choke on it easily.

    I'm trying to just eat meat and veggies mainly and I am doing intermittent fasting. To help me, when I get up, I put a tablespoon of apple cider vinegar and a teaspoon of lemon juice with a little stevia for flavor in 8 ounces of water and drink it. That not only helps regulate my insulin levels but it also is getting rid of fat on my liver (I have non-alcoholic fatty liver disease). I try to eat around 2 PM an 7 PM (no eating after 7:30 PM), and it's seeming to work.

    4 Catfish fillets (4-oz)
    1 tb Fresh lemon juice

    Lemon wedges (optional)

    Directions: Brush both sides of fillets with lemon juice, and
    sprinkle with Cajun Seasoning. Place fish on a broiler pan coated
    with cooking spray, and broil 5 minutes on each side or until fish
    flakes easily when tested with a fork. Serve with lemon wedges, if
    desired.

    it's hard to eat healthy when prices shot through the roof. i'm spending 20-40 bucks more when i'm buying at the grocery store.

    in this economy it's cheaper to eat junk and drink alcohol.
    I don't really do any fasting (and I don't think that would be healthy for me), but I work 12 hr days and I only have peanutbutter on one slice of bread when at work. And i drink a lot of water.

    No clue why the pounds aren't peeling off but I have lost 10 lbs in the past 2 months and kept it off. it's probably the alcohol that's preventing the
    further weight loss.

    1 c Graham crumbs
    1 tb Margarine; light, melted

    2/3 c Sugar
    1/2 c Plain yogurt
    1/4 c Flour; all-purpose
    2 Egg whites
    1 Egg
    1 tb Orange rind; grated

    2 c Cranberries
    1/2 c Orange juice
    1/3 c Sugar
    2 ts Cornstarch

    Combine crust ingredients. Press over bottom of 9-inch springform
    pan. Bake at 325 degrees F for 5 minutes.

    In food processor, blend cottage cheese until smooth. Add cream
    cheese and process until smooth. Add remaining filling ingredients;
    process until smooth. Pour into pan. Bake at 325 degrees F for 50 to
    60 minutes or until almost set in centre. Run knife around edge of
    cake to Ioosen from rim. Cool on rack. Chill.

    Combine cranberries, orange juice, and sugar in a saucepan. Bring to a
    boil, stirring constantly. Then simmer 3 minutes or until cranberries
    start to pop. Dissolve cornstarch in 1 tbsp water. Add to pan, cook
    and stir 2 minutes. Chill topping, and spread over cake before
    serving.

    I haven't yet because I just dropped $150 on an old but very solid
    highboy dresser that I seriously needed. The air fryer is next month.
    I know about the metal tray but not the silicon inserts.

    Title: Holiday Gingerbread Cookies
    Categories: Cookies, Christmas
    Yield: 24 Cookies

    3/4 c Molasses, light or dark
    3/4 c Margarine (1-1/2 sticks)
    3/4 c Sugar, brown firmly packed
    3 2/3 c Flour, all-purpose
    2 ts Ginger, ground
    2 ts Cinnamon, ground
    1 ts Baking Powder
    1/2 ts Baking Soda
    1/2 ts Nutmeg, ground
    1 Egg
    Icing and assorted candies

    In 3-quart saucepan over medium heat, heat molasses, margarine and
    brown sugar until mixture boils, stirring occasionally to blend well.
    Remove from heat; cool. In large bowl, combine flour, ginger,
    cinnamon, baking powder, baking soda and nutmeg. Blend egg into
    molasses mixture. With spoon, stir molasses mixture into flour
    mixture until smooth. Wrap dough in plastic wrap; chill at least 1
    hour.

    Heat oven to 350F. Divide dough in half. On floured surface, roll
    dough to 1/8 to 1/4-inch thickness. Cut with floured 5 x 3-inch
    gingerbread cookie cutter (or knife your own design). Carefully lift
    with metal spatula onto lightly greased cookie sheet. Bake for 10 to
    14 minutes or until no indentation remains when touched. Remove from
    sheet; cool on wire rack. Decorate as desired with icing and candies.
    Store in tightly covered container for up to 2 weeks.
