1 c Zucchini; grated
3 c Flour
4 ts Baking powder
1/2 ts Baking soda
1 1/2 ts Salt
1/4 c Sugar
1/4 c Oil
2 tb Lemon or orange zest; grated
1 c Milk
1 c Nuts; chopped (optional)
Wrap shredded zucchini in several thicknesses of paper towel and
carefully squeeze out moisture over sink; set aside. In mixing bowl,
blend flour, baking powder & soda, and sugar. Add oil & beat at
medium speed until mixture resembles coarse meal. Stir in zucchini &
lemon or orange zest. Combine eggs & milk; add to zucchini mixture &
mix well. Stir in nuts if desired. Pour into greased 10x5" loaf pan.
Bake at 350?F for 1 hour or until wooden toothpick iserted in center
comes out clean.
