Title: Spicy Beef Roulades

Yield: 2 Servings
2 Thin pieces of favourite cut
- of steak (minute/frying/
- sirloin all work well)
2 tb (heaped) marscarpone
lg Bunch of spinach
2 tb Sweet chilli sauce
14 oz (390 g) tin of chopped plum
- tomatoes w/chilies;
- drained
2 cl Garlic; chopped
Salt & pepper
1 sm Red onion
Olive oil
Handful grated cheddar,
- Parmesan or mozzarella
Pre heat oven to 180┬║C/360┬║F
Blanch the spinach in boiling water then plunge into cold
water so that it keeps itΓÇÖs colour.
Place the onion and garlic in a blender and whizz until
finely chopped, add the drained tomatoes and a little
olive oil to thin out, then add your sweet chilli sauce
(you can add more if you wish).
Tip the sauce mix into a sauce pan and simmer for 10-15
mins until nice and thick. Season to taste. Remove from
the heat.
Cover the steaks in cling film and bash out really thin
using a mallet or rolling pin
Drain the spinach and remove moisture using a tea towel or
by gently squeezing the spinach.
Mix the marscarpone and spinach in a bowl and season to
taste.
Season your flattened steaks with salt and pepper then
slice each steak into half.
Divide the spinach and marscarpone mix between the 4 slices
of steak and carefully roll up into 4 little parcels.
Place on a baking tray and cover with the tomato sauce.
Top with the grated cheese
Bake in the oven for 20-25 mins until steak is cooked and
the cheese is golden.
Serve with homemade chips and veg.
